I made these loaves at the King Arthur Bakery Education Center in Norwich Vermont, during a one-week course I attended in April 2015.

 

RL Breads is an artisan microbakery operated by Rory Perry.

In 2014, at the behest of my Uncle Mike, I began constructing a wood-fired bread oven in the village at Heritage Farm. With the help of my Dad, I finished the oven enough to begin baking in 2015. Visitors enjoyed watching the baking process and learning about the process of bread baking, and in May 2016 a small bread kitchen was added. Although I produce a variety of products, my passion is naturally-leavened breads based upon a sourdough culture that I have been maintaining since 2014.
